Easiest chicken yet: CheezIt Chicken

TubaDad was traveling and the girls and I wanted some easy-peazy chicken that would use ingredients we had on hand (preferably not more than 3) and not take too much brain power. Hey it was hot and as is typical in summertime we were all tired, lazy, and hungry. I’d heard of CheezIt Chicken on Pinterest, but various recipes called for sour cream or plain yogurt, neither of which we had. We did have some ranch dressing, so we used that instead and whipped up a quicko dinner. Here’s how:

We crushed 2 cups of CheezIts (which we all adore) in a plastic bag. Really pulverized the heck out of those little crackers, you know? Then dipped the chicken tenders in the dressing and wiped off a bunch of it so it was just a light coating (we had fancy organic low-fat dressing in the fridge but any kind should work). Then we dipped the chicken tenders in the pulverized CheezIts, placed them in a glass baking dish, and drizzled a tiny bit of melted butter on each chicken piece.

Baked at 375 for about 15 minutes (stick a thermometer in it to tell when it hits 170, because your oven might take longer – I’ve noticed that ours is fast). Here’s the printable recipe, if you need it.

It came out great! You could really taste the CheezIt tang, which, since we all adore CheezIts was a good thing in our book. And the ranch gave a nice little flavor as well.

Not to be outdone after this “gourmet” (coughcough) creation, the girls then shooed me out of the kitchen and said they were making dessert. Hmmmm.

Well their dishes certainly got higher marks than the chicken for creativity...

    Could you describe what is in the first dessert? It looks like dry cereal but I cannot tell the rest.

    The chicken looks delicious, by the way, and if I had not given up dairy in February I would make it in a heartbeat.

    1. Let's see, Ro's culinary delight was Special K cereal, mini choc chips, mini marshmallows, flat pretzel, cut fruitroll, and brown sugar sprinkles.

    I have seen that CheezIt chicken recipe but never tried it. My kids LOVE CheezIts and Ranch so I am thinking it would be a crowd pleaser here:)

  3. We are SO making that this week. We are big Cheez-It fans over here. I gave my niece the Mozzerella version, and told it was the same thing. She took one bite and said, "Aunt Orly, these are NOT the same thing." I like the white ones! Maybe I'll mix them all together and get really crazy!

  7. I made the cheezit chicken last night, but with turkey cutlets that were on sale at Safeway. Really yummy!! I used greek yogurt instead of sour cream (or ranch, hehe) and it was yummmmmmyyyy!
