Up, up, and away, and every dog has its day...

Nothing fancy, just a few clips from Tahoe, including Ro and Ree's first flight in a small four-seater plane, my dad's great landing in the swirly mountain winds, and a few minutes of us driving along with Uncle Bobby and Aunt Jane blasting "The Dog Song" (Every Dog Has Its Day, by Toby Keith). Bobby and Jane introduced us to the song as we were cruising the mountain roads in Tahoe, and it instantly became the girls' new fave. They clamored for it Every Single Time we were in the car. Wonder if it's still Bobby and Jane's favorite song or if we beat it out of them? Heh.

Fun stuff.

On a completely unrelated note: does anyone have any great recipes for fish? The girls are wild about the stuff, even with the boring way I cook it. And I'd love to try something new. Any kind of fish or shellfish works -- so far they like mahi mahi, ahi, white roughy, tilapia, salmon, sea bass, shrimp, lobster, and crab -- pretty much any kind we've tried. So please share!

PS: Both girls LOVED the plane ride. The sun was shining right in Ro's eyes before takeoff, so that's the face she was making at the very beginning.

    I like salmon (Springer) with lemon and no-salt spice(Mrs. Dash) then you slather on sour cream and crush saltines over it...then bake it...believe it or not, it's delicious.

    My wife also found a great maple glaze for salmon...but you'd need to hunt her up for that.

  3. This might suck the good nutrition out of the fish, but salmon is rather yummy in a puff pastry crust. I think you just wrap it around it and bake it.

  5. We are big fans of orange roughy. I marinate it for a couple of minutes in: lemon juice (1 whole lemon), olive oil (couple of tbsps), 2 cloves garlic (minced), and a bunch of chopped fresh cilantro. Sautee filets over medium-high heat for a couple of minutes. Spritz fresh lemon juice and enjoy. I usually serve it with garlic/olive oil pasta and a salad. Easy, yummy and very summery.
    I also like the BBQ shrimp recipe from P.ioneer Woman. Its a bit on the spicy side, but so very yummy!

    I don't comment much but I have a fantastic Asian Fish Packet recipe. I usually double this recipe to feed my family. Good leftover.

    2 6oz fillets(I use cod or haddock--any whitefish)Even works w/ frozen if you thaw first.
    1c. cooked rice
    2c. bok choy-chopped
    2 chopped scallions

    Sauce:
    1 T oil
    1 tsp. grated ginger
    1 clove minced garlic
    2 T soy sauce
    2 tsp. sesame oil

    Oven: 450. Make 2 large, doubled squares of foil. Brush with oil (I spray w/ Pam) in each square used.

    Spread half of the cooked rice in each square, layer half bok choy, fish, scallions. In bowl mix oil through sesame oil for the sauce. Pour 1/2 over each fish packet. Fold into an airtight square. Place foil packets on cookie sheet. Bake 20 minutes.

  7. We use Everglades seasoning and butter on any kind of white fish (Tilapia mostly), then grill it or bake it - just to keep it simple.

  8. wow... that ride brought back such good memories for me! i used to date a pilot and we'd go out flying, the best is when he'd let me fly the plane :O) i LOVE small aircraft... it's the best!

  9. I cook mine with lemon pepper seasoning. My whole family loves it and my husband used to say why go out for fish when you can cook it so well at home.

  10. Trader Joes has a frozen fish called White Ruffy. No fishy smell at all. I dip it in Italian seasoned bread crumbs and fry it (thawed) in a little olive oil on the stove. You could also bake it, I suppose. Absolutely yummy and one package is only $5!

    We also grill salmon (keeping the skin on one side so it doesn't crumble) with a little olive oil on it and your choice of seasoning. Mmmmm....

    I also have a terrific clam chowder recipe that I'll email to you. It's more of a cold weather dinner, but so good!

  11. The favorite way for fish here involved rice crispies. We usually use tilapia. First coat with flour, then an egg mixture (1 egg, a couple Tbls lemon or lime juice, a little salt and ginger), then coat with a mixture of about 1 cup crushed rice cereal and 1/2 cup chopped almonds mixed together. Bake at 425 about 10-15 minuets. The big plus is that along with everyone eating it the girls love to help crushing the rice cereal and using the chopper to chop up the almonds. When ever they can help it seems they always eat the meal better because they have been a part of it.

    I just got some Chili-lime rub from Williams Sonoma and we had it on Tuna steaks the other night. It was FANTASTIC. They also have a potlatch seasoning for fish that is great. Just rub the fish, and grill it until done!

  13. We have a super simple salmon recipe but I think you could sub any kind of fish.
    Preheat to 400
    Rinse fish and pat dry
    lay on large square of foil
    sprinkle with garlic powder or fresh garlic, splash of soy sauce and splash of sweet chili sauce
    wrap up the foil packet
    bake for 20 min then take out and let stand unopened for 5 min. If you have really thick or really thin fish then adjust the time up or down.
    Super simple!

  14. My son's favorite way to eat fish is to put it in a foil packet with a bit of butter, a slice of lemon and parsley and whatever seasonings we have on hand. Seal up the packet and we throw it on the grill (you could place it in the oven as well). His favorite fish to do this with is halibut, but we have often done it with Tilapia as well.

    We buy pre-marinated fish at Trader Joe's, defrost it the day before, and put it on the grill!

  16. Here's the only marinade we use on fish anymore ... total yum!

    ¼ cup soy sauce
    2 tablespoons sugar
    3 large garlic cloves, minced (about a Tbs.)
    1 lime, juice of (2 Tbs or so)
    1 teaspoon fresh ginger, minced
    ¼ teaspoon crushed red pepper flakes

    Combine, pour over fish, let set about 20 minutes - grill or broil.

    Note: I always make extra sauce and just heat it in the microwave a bit. Yes, it's that good.

  19. We use "Potlatch" seasoning from Williams Sonoma. It's made for fish and seafood. It's SO good!!! We usually bake our fish or saute shrimp with the Potlatch. Try it...you'll love it!!!

  20. Have you tried some smoked salmon dip for them? I bet they would love that. Served with those Ritz Flipsides things? Oh my!

    8 oz Cream cheese
    1/2 C sour cream
    1TBL lemon juice
    1 TBL fresh or 1 tsp dry dill
    1 tsp horseradish
    1/2 tsp salt
    1/4 tsp black pepper
    The salmon amount is tricky as I got this recipe while living in Alaska and it says "use 2 pieces" I just made it here in Ohio and I used like 7-8 oz I think.
    You blend the cream chz and sour cream and then add the rest. It helps if you flake the salmon ahead of adding it to the mix.

    We just tried this: Any firm white fish. Rinse and pat dry. Season with salt and pepper. Brush with oil. Grill until done- flipping only once on the grill. Then quickly grill your bread (I buttered mine lightly first). Then have a fish sandwich with a simple creamy slaw on top of the fish- no other condiment needed. It was easy and delicious! I served it with some good summery potato salad.

  23. I'm not a big fish fan (blame eating too many fish sticks when I was young). Anyways...DH is...we found this recipe that I can handle (doesn't taste too fishy) and DH really likes it too!

  24. Broiled Orange Roughy Parmesan


    INGREDIENTS

    1 cup Parmesan cheese
    6 Tablespoons, softened Butter, plus a few pats for top of fish
    4 1/2 tablespoons mayonnaise
    3 tablespoons fresh lemon juice
    1 teaspoon dried basil
    1 teaspoon ground black pepper
    1 teaspoon onion powder
    1/2 teaspoon celery salt
    3 pounds Orange Roughy fillets

    DIRECTIONS

    1. Preheat your oven's broiler. Grease a broiling pan or line pan with aluminum foil.

    2. In a small bowl, mix together the Parmesan cheese, butter, mayonnaise and lemon juice. Season with dried basil, pepper, onion powder and celery salt. Mix well and set aside.

    3. Arrange fillets in a single layer on the prepared pan. Add a few pats of butter to top of fish. Broil a few inches from the heat for 7 to 10 minutes. Flip the fillets over and broil for a couple more minutes (5 – 7). Remove the fillets from the oven and cover them with the Parmesan cheese mixture on the top side. Broil for 2 more minutes or until the topping is browned and fish flakes easily with a fork. Be careful not to over cook the fish.
