It’s almost 10 o’clock? You have got to be kidding me!

We just finished mixing up our Pumpkin Dump Cakes for tomorrow, one for my mom’s house and one for our cousins’ house, and didn’t even look at the time until we popped them in the oven. Gah!

They have to bake for at least an hour. Gah again!
At least the girls had fun whipping them up. Since we were making two cakes, they each got to do everything in their very own bowls and pans.

The stuff is delicious, like a gooey pumpkin pudding with a hint of cake. If anyone needs the recipe (which is my mom’s), here tis:

Pumpkin Dump Cake (printable recipe)

1–29 oz. can pumpkin
1 –12oz. can evaporated milk
3 eggs
1 C. sugar
1 tsp. salt
1 T. cinnamon

Mix above ingredients and pour into 10 x 14 cake pan, ungreased.

Then:
1 box yellow cake mix – sprinkle over pumpkin mixture
1 C. chopped pecans – sprinkle onto cake mix
¾ C. melted butter – pour over everything

Bake at 350 for 45 to 50 minutes (or until a knife in the center comes out clean, like a pumpkin pie – if you use a slightly smaller pan your cake will be thicker and will need to cook a little longer)

    I am glad you left the recipe, I never heard of that one before. As always your girls look so cute. I love the aprons did you make them? Have a blessed Thanksgiving.

  2. Hi Erika, have a wonderful Thanksgiving! The aprons were from Sur La Table a few years ago. I searched back through the blog and found this pic of our tiny chefs first wearing the aprons back in '08. Awwwww!

    I wish we celebrated Thanksgiving in Australia, I'd even settle for baking with pumpkin. Is yellow cake mix similar to sponge cake mix maybe?

  4. Mmmm!!! I used to make a delicious cherry dump cake but had forgotten about it. This sounds amazing!! I might need to make one this weekend in honour of our friends to the south celebrating their Thanksgiving!

  7. It's really yummy (and a tad bit healthy) if you add cranberries, diced apples and/or diced pears to the pumpkin mixture!

    Hi M3,
    Do you know if this can be made in a bundt pan and if the temp/time would change? Do you have photos of the finished product? Want to make for a party next week.

    1. Hi Cindy, I don't think it would work well in a bundt pan -- haven't tried it, just thinking that it would change the consistency. It comes out a little pudding-like and you wouldn't want it to dry out. I think we woofed it down before even thinking about the camera, but I searched on Google images, and there's one here looks very similar.

    3. Hm, not sure. Would probably depend on the group -- any time I've made this (or my mom has) the pan is practically licked clean. But we have kind of rowdy parties and people eat everything in sight! :-) They also love anything homemade. You could always bring little paper bowls or plates and put out single servings next to the pan.

    Hi M3,
    Had condensed milk and not evaporated milk, so found a similar recipe online that used condensed milk and made the cupcakes. The butter on top made the cupcake liners very oily but when just out of the oven, tasted very good. However, sitting out, they became very hard and had to microwave to make it soft. Does your recipe leave an oily bottom and get hardened at room temperature? Wondering if I cooked too long guessing wha the cupcake time would be.

    1. Hi, no it's definitely not hard at all, and that's even if I have a few leftover pieces that I just wrap in foil and eat the next day or two for breakfast. And I don't think the bottom is oily either, although I've always made it in a pan, and not with paper/liner underneath, but I've never noticed it.
